Gut Friendly One Pot Dinner

Are you looking for a high prebiotic-gut healthy dinner that’s easy and flavourful? You’ll want to try out this warming comfort dish!

Ingredients:

  • 1/4 cup Coconut/Olive or Avocado Oil

  • 1 lb Extra Lean Ground Chicken (Turkey or beef works too)

  • 2 Yellow Onion (medium, diced)

  • 1 tsp Turmeric

  • 1/2 tsp Cinnamon

  • 1/2 tsp Cardamom

  • 1/4 tsp Ground Ginger (Optional)

  • 1 tsp Ground Cumin (Optional)

  • 1 1/2 tsp Sea Salt

  • 3 Tomato (Large, diced; Can substitute with crushed/diced canned)

  • 2 cups Baby Spinach (Chopped)

  • 1/2 cup Parsley (finely chopped and divided)

  • 2 tbsp Raw Honey

  • 1/3 cup Organic Raisins (Avoid if you're feeling gut sensitive)

Directions:

  1. Heat oil over medium heat in a large pot or saucepan. Add chicken, onion, turmeric, cinnamon, cardamom, cayenne, salt and other spices to taste. Cook for 15 minutes, stirring occasionally.

  2. Stir in tomatoes, spinach, parsley, honey and raisins. Cover and cook for another 15 minutes, until chicken is cooked through and sauce is thick.

  3. Uncover and serve immediately. Enjoy!

Other Notes:

  • Serve it With

    Cooked oats for an added prebiotic punch!

  • Storage

    Refrigerate in an airtight container up to 3 days, or freeze if longer.

  • Extra vegetables!

    Finely chopped carrots or cauliflower can be added at the beginning of cooking

  • Turmeric Tales

    Turmeric is a flowering plant of the ginger family. While it has been touted as a cure-all the research isn't as strong in humans. But it certainly doesn't seem to hurt and adding herbs and spices seems to have at least potential benefit - and added taste!
