Fudgy Chocolate Banana Protein Brownies

I’m going to be honest. I think bananas are the worst tasting (and smelling) fruit on the planet. Except maybe durian but I’ve never been close enough to durian to really know. So, in my world, bananas are horrid. But...I realize I’m in the minority over this issue.

Anyway...Don bought a lot of bananas in our recent shopping and they are going overripe too quickly. They’ve been chopped and put in the freezer to avoid my gagging around them. But in case you've got some bananas you need to use up and want to find a fun way to use them, I’ve got you covered. 

What do we have?

Probiotic food: Sorry - nothing in this recipe

Prebiotic food: Bananas & dark cocoa powder

Servings: 9

IBS-low FODMAP friendly?  It depends on your protein powder - but as long as it’s compliant, yes!

IBD-AID friendly?  Don’t sprinkle the chopped walnuts on at the end, you’re good to go - with a double prebiotic punch!

Reflux friendly?  Chocolate can be an issue, use caution

Ingredients:

  • 1 cup All Natural Peanut Butter (or any nut or seed butter)

  • 4 Bananas

  • 1/2 cup Dark Cocoa Powder

  • 1/2 cup Chocolate Protein Powder

  • 1/2 cup Organic Dark Chocolate Chips

  • 1/2 cup Walnuts (chopped)

Directions:

1. Preheat the oven to 350ºF (177ºC). Line a cake or loaf pan with parchment paper.

2. In a small saucepan over low-medium heat, melt the peanut butter.

3. In a mixing bowl, mash the bananas, cocoa powder, protein powder and nut butter until combined. Stir in chocolate chips.

4. Pour into the pan, sprinkle with walnuts and bake for 25 minutes. Remove from the oven and let cool completely before serving.
